
Andrea Rota is the Chef of Ristorante Bolle, a rising talent who has transformed a deep passion for cuisine into a distinguished professional path. Born and raised on the shores of Lake Lecco, Andrea developed his culinary vocation at an early age, guided by a strong curiosity for ingredients and a constant drive to innovate while remaining faithful to tradition.
After graduating from the San Pellegrino Terme Culinary Institute, he began his career in some of Italy’s most respected kitchens. A defining chapter of his journey was his experience at the renowned Piazza Duomo in Alba, under the mentorship of Enrico Crippa. There, he embraced the values of discipline, respect for raw materials, and the relentless pursuit of excellence—principles that shaped both his technical precision and his refined sense of balance and harmony in flavor.
In 2022, Andrea joined the brigade at Ristorante Bolle and, just one year later, was appointed Head Chef. Under his leadership, the restaurant has further strengthened its identity and reputation through a cuisine that harmoniously blends creativity and tradition, celebrating the finest local produce. For Andrea, cooking is fundamentally a collective effort: “Without a cohesive team, a chef alone is nothing,” he often says. This philosophy is clearly reflected in the seamless synergy between kitchen and dining room, working together to deliver a distinctive and memorable guest experience.
In 2025, Andrea launched an ambitious initiative aimed at creating a collaborative movement among young chefs and hospitality professionals from the Orobie region. The project seeks to foster meaningful partnerships, support emerging talent, and preserve local culinary heritage, reinforcing Andrea’s role not only as a chef, but also as a leader and cultural ambassador for the territory.
Today, under Andrea’s guidance, Bolle stands out for a cuisine that enhances authentic flavors while embracing innovation. Each dish tells a story rooted in technique, passion, and creativity.
